These celebrated sardines from Galicia are net-caught along the shores of the Rianxo estuaries in northern Spain. They are processed within hours of being harvested. After a rinse in fresh seawater, they are lightly sautéed in extra virgin oil, just enough to hold their shape-then they are carefully packed by hand to be preserved in tins. Exceptionally tender and mild in flavor, they are best enjoyed with a crisp white wine or a cold beer and some crusty bread.
